Get your greens in with this delicious kale salad!  Kale is incredibly good for you.  It’s packed with vitamins A, C, and K.  The tangy sesame dressing in this recipe balances out the sweet addition of mangoes and blueberries.  With a kick from the red pepper flakes, and some crunch from the almonds, this salad is a simple blend of healthy perfection.  Easy to make, and easy on your waistline.

  • 1 bunch Lacinto kale
  • 1 tbsp. sesame oil
  • 1 tbsp. honey
  • 1.5 tbsp. rice wine vinegar
  • Salt and pepper
  • Pinch of red pepper flakes
  • 1 cup mango
  • 1/2 cup blueberries
  • 2 tbsp. sliced almonds
