Recipe: Shrimp Pasta with Creamy Curry Sauce

I love shrimp, and I cannot get enough of my new spiralizer so I was excited to try this shrimp pasta recipe.  This recipe is creamy, delicious, and healthy.  The recipe calls for brown rice noodles, but you can use any noodles you want, including spiralized zucchini, my favorite new pasta swap!



  • ½ Tbsp. coconut oil, melted
  • ½ Cup shallots, diced
  • 1 Tbsp. garlic, minced
  • ½ tsp. ginger, minced.
  • 1 tsp. corn starch
  • ¾ Cup reduced- sodium chicken broth
  • ¾ Cup light coconut milk
  • 1 tsp. yellow curry powder
  • ½ tsp. fish sauce
  • ½ Tbsp. brown sugar
  • ¼ tsp. salt
  • 1 lb cooked shrimp
  • 1 6 oz package of brown rice noodles
  • Cilantro, for garnish
