This hearty and delicious slow cooker beef stew recipe is amazing! It only takes 10 minutes of prep work to make this amazing gluten-free meal and it freezes like a dream. I love to change up my veggies, and typically throw in whatever vegetables I have handy. This healthy dish always comes out tasting amazing.

 

Ingredients

  • 1 1/4 lb's beef stew meat, cubed
  • 1 tablespoon coconut oil (optional)
  • 1 medium yellow onion, diced
  • 2 medium potatoes, diced
  • 2 parsnips, peeled and cubed (about 1/2 lb)
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups green beans, fresh or frozen
  • 1 (14 ounce) can diced tomatoes, with their liquid
  • 3-4 cups chicken or beef broth
  • 2 teaspoons dried thyme
  • 1/2 teaspoon dried rosemary, lightly crushed
  • Sea salt & black pepper to taste
  • 2 tablespoons potato starch (optional)

I love this stew and have made it a few times. A few things that should be updated, there are no cooking directions. I’ve made lots of stews in a crockpot so I have it figured out but most people need more direction than just a list of ingredients. The total prep time is WAY more than 10 minutes. I’m a pretty above average cook and I cannot chop (and peel); carrots, potatoes, celery, parsnips, garlic and onion in ten min. Even on my fastest day this is a bit exaggerated.
