Recipe: Slow Cooker Chicken Wild Rice Soup

My family loves chicken wild rice soup, like true Minnesotans! This creamy midwestern classic usually is loaded with fat but our friend from Ambitious Kitchen took this family favorite and lightened it up. One serving of her recipe has only 300 calories and 20 grams of protein!  Gotta love that! Also, it’s made in a slow cooker which makes for easy preparation. It’s the best comfort food for a cold winter’s day.

Ingredients

  • 2 teaspoons olive oil
  • 3 garlic cloves
  • 1 white onion
  • 1 cup chopped carrot
  • 2 celery sticks
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 1/2 pounds uncooked chicken breast
  • 1 1/4 cups uncooked wild rice
  • 7 cups chicken broth
  • 1/2 cup reduced fat sour cream
  • 1/4 cup all-purpose flour
  • Salt & pepper to taste

I wonder if this can be made with brown rice flour, to make it gluten free?

I was wondering if I could substitute quinoa for the rice? If so, any changes in how to prepare or cooking? Thank You. As you may have guessed, my culinary skills are limited yet I am learning :) thank you
