Indian food is a team Get Healthy U favorite! This recipe is better than Indian take-out and so much healthier too. This rich and creamy curry chicken has just the right amount of spices, and makes a very rich and delicious meal to come home to after a long day. Spiced coconut rice, brown rice, or rice noodles make an excellent side dish.


  • 1/2 cup mild curry paste (such as Patak’s)
  • 1/4 cup distilled white vinegar
  • 2 to 4 cloves garlic (depending on size)
  • 3″ piece ginger root, peeled
  • 1-14.5 ounce can diced tomatoes (or 1 medium tomato cubed)
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons ground cardamom
  • 2 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1- 3 to 4 pound whole organic chicken, skin removed, cut into 8 pieces
  • 2 medium yellow onions, cut into half-moons and thinly sliced
  • 1 to 2 dried red chiles
  • fresh cilantro (or parsley) for serving
