  • 1 lb chicken, cut into bite-size pieces
  • 1 egg
  • 1/2 cup tapioca flour (or regular flour if not gluten-free)
  • 1 tablespoon coconut oil
  • 1 6 oz can tomato paste
  • 1/2 cup water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons coconut palm sugar (or brown sugar)
  • 2 tablespoons coconut aminos (or gluten-free tamari or soy sauce)
  • 2 tablespoons freshly grated ginger
  • 1 small red onion, diced
  • 1 bell pepper, diced
  • 1 head broccoli, cut into florets
  • 1 1/2 cups fresh pineapple, diced
