Recipe: Strawberry Chocolate Chip Muffins

I love chocolate-covered strawberries, so I knew I had to try these Strawberry Chocolate Chip Muffins! The healthy muffins are bursting with whole-grains, fresh strawberries, and mini chocolate chips. If you prefer dark chocolate, go for it! Absolutely delicious!

  • 1 cup milk of choice
  • 1 tbsp white or apple cider vinegar
  • 1 1/2 tsp pure vanilla extract
  • 3 tbsp vegetable or melted coconut oil
  • 2 cups spelt flour (or all-purpose flour, or gf mix plus 1/2 tsp xantham gum)
  • 1/2 tsp plus 1/8 tsp salt
  • 2 tsp baking powder
  • 1/2 cup xylitol or sugar of choice
  • pinch pure stevia extract, or 1 extra tbsp sugar
  • 1/2 cup mini chocolate chips
  • 1 loosely-packed cup diced strawberries

These muffins are simply perfect! I have made them twice now, didn't make any substitutions (except choosing whole wheat flour and regular sugar as noted), and even made a batch for Valentine's Day with a slice of fresh strawberry added on top of each muffin halfway through cooking. Thank you for the recipe!
