We always think that’s it’s easier to stick to a healthy eating plan when you allow yourself to have a treat now and then. This individual size strawberry shortcake is just perfect! Made with whole wheat flour, the shortcakes are full of fiber but are still deliciously light and tender. Topped with juicy strawberries and whipped cream, it’s fancy enough for a dinner party and yet easy enough to whip up on a weeknight.


  • 1 1/2 pounds strawberries, hulled and quartered
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons sugar
  • 1 1/2 cups skim milk
  • 3 cups fat free whipped topping (or whip your own heavy cream)
