Recipe: Chicken Chopped Salad with Strawberries, Avocado, and Feta

I love strawberries on their own, but I also love the sweetness they add to salads.  This salad is one of my favorites because of all the different flavors and textures.  There is creaminess from the avocado and feta, savory flavors from the grilled chicken, crunch from the pecans, and of course a little sweetness from the strawberries. This salad is one of my favorites and I know it will soon become a go-to salad for you!



  • 2-3 large romaine hearts, washed and chopped
  • 6 oz grilled chicken breast, chopped
  • 1 1/2 cups ripe organic strawberries, quartered
  • 1 cup grape tomatoes, halved
  • 2/3 cup sweet corn
  • 1 avocado, diced
  • ¼ cup toasted pecans or almonds, coarsely chopped
  • 1/3 cup President Cheese Valbresco Feta Crumbles
  • Salt and freshly ground black pepper, to taste
  • For vinaigrette:
  • 1 lemon, juiced
  • 1 teaspoon honey or sugar
  • 1 teaspoon apple cider vinegar
  • 3-4 basil leaves, finely chopped
  • 1 clove garlic, minced
  • 2 teaspoons olive oil
