This healthy recipe for instant pot sweet potato chicken curry is so flavorful and delicious you will never believe you made this complete meal in just 30 minutes! If you don’t have an instant pot- no fear, you can make this creamy and delicious protein packed meal in a slow cooker too! This healthy Whole30 sweet potato chicken curry is dairy free, gluten free, Paleo and crazy good! We love this sassy curry with tender chicken served over a bed of cauliflower rice  for a complete healthy meal that tastes sensational.


  • 2 teaspoons Pure Indian Foods Ghee
  • 1/2 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 lb chicken breast, cubed
  • 1 sweet potato or butternut squash, cubed (2 cups)
  • 1 red pepper sliced and diced
  • 2 cups green beans, trimmed
  • 2/3 cups chicken broth
  • 3 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon ground tumeric
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • 1 can of full fat coconut milk
  • Cashews, cilantro & cauliflower rice for serving (you can purchase cauliflower rice in the freezer or produce section or make your own)
  • Optional: Arrowroot starch (for thicker curry)**
