Ingredients

  • 2 large sweet potatoes, peeled and chopped
  • 1 tbsp butter
  • 1/2 cup of  soft goat cheese
  • 3-4 chives thinly sliced (you could also use 1-2 green onions)
  • 1/8 cup fresh chopped parsley
  • 1/4 non fat chicken stock (if needed)
  • Salt and freshly ground pepper
