Most mashed sweet potato recipes have a lot of butter and brown sugar, but I like that this recipe adds taste using goat cheese, fresh chives and parsley instead. If you’re looking for the comfort food taste but with less “junk,” try this unique Sweet Potato Mash with Goat Cheese and Chives recipe! And don’t forget that sweet potatoes are loaded with vitamin C, potassium and fiber!



  • 2 large sweet potatoes, peeled and chopped
  • 1 tbsp butter
  • 1/2 cup of  soft goat cheese
  • 3-4 chives thinly sliced (you could also use 1-2 green onions)
  • 1/8 cup fresh chopped parsley
  • 1/4 non fat chicken stock (if needed)
  • Salt and freshly ground pepper
