Looking to amp up a classic lasagna? Well then, we’ve got just the recipe for you. This Sweet Potato Spinach Lasagna recipe is not your average lasagna; in fact, it’s got 4 different kinds of veggies, a killer sauce and a lighter cheese mixture made up of cottage cheese, ricotta and sweet potato puree. Perfect for a meatless Monday night, this hearty dinner will please the whole family!

P.S. you can find sweet potato puree at most grocery stores (just make sure that you look for 100% sweet potato with no added sugar) but if you can’t find it, you can make your own by roasting/boiling sweet potatoes and then puree them in a food processor or by using an immersion blender.

Ingredients

  • For the Sweet Potato Cheese
  • 1.5 cups whole milk ricotta
  • 1.5 cups low-fat cottage cheese
  • 1 15-ounce can sweet potato puree (about 1.5 cups)
  • 1 tablespoon fresh rosemary, chopped
  • For the Sauce
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely diced
  • 3 large handfuls of spinach
  • 1 24-ounce jar organic marinara sauce
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • Pinch of black pepper
  • Pinch of sea salt
  • Other
  • 12 lasagna noodles
  • 1/2 cup mozzarella cheese
