Recipe: Vegetarian Brown Rice Bowl

My daughter is vegan, so some nights when she’s home, we make a vegan meal to share together.  This week, we tried this vegetarian brown rice bowl.  The recipe itself simple shows you how to roast the veggies, then you add whatever fix-ins you want to make it a bowl.  We paired it brown rice, a dollop of tahini miso sauce, and a sprinkle of pumpkin seeds.  It was delicious!  Try your own brown rice bowl creation tonight.

Ingredients

  • For the Roasted Veggies
  • 1-2 tbsp EVOO
  • 1-2 tbsp minced garlic
  • 1 large sweet potato
  • 1/2 medium yellow onion
  • 4 cups broccoli florets
  • 1 tsp italian seasoning
  • For the Bowls
  • 1 cup brown rice, cooked
  • 1/4 cup hummus
  • 1/4 cup sprouts
  • 1 teaspoon hemp seeds
