These Whole Wheat Coconut Oil Sugar Cookies with Natural Strawberry Icing are a delicious, healthy dessert perfect for Valentine’s Day! The icing is so naturally sweet that the recipe has way less sugar than your typical sugar cookie (even the healthy ones!).   • 1/3 cup melted coconut oil
  • 1/3 cup coconut sugar
  • 1 egg
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon almond milk
  • 1 1/2 cups whole wheat pastry flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Icing
  • 1 cup freeze-dried strawberries
  • 1/2 cup powdered sugar
  • 1 teaspoon honey
  • 1/4 teaspoon vanilla extract
  • 2-3 tablespoons almond milk
