We love these little zucchini boats because they are not only adorable but healthy too! They’re perfect for a snack or as part of a delicious lunch. Plus, you can totally be creative with the stuffing. This recipe uses basic pizza ingredients: red sauce and cheese, but you can add whatever you’d like! It’s a great recipe for kids and adults alike that’s gluten free and can also be dairy-free.


  • 6 large zucchini
  • Salt & Pepper
  • 1 cup tomato sauce
  • 1/2 cup shredded cheese (use Daiya for vegan/dairy-free)
  • Optional
  • 1/2 cup crumbled tempeh
  • Olive oil
  • Dried Basil or Oregano
