Avocado toast has been all the rage, but now sweet potatoes are getting their time in the sun, er toaster… These vegetarian, gluten-free toasts use sweet potatoes as the base, cut vertically so you can put them in the toaster and then topped with whatever ingredient you’d like. We love the sweetness of the almond butter/banana combo but also love the pizza version for a fun mid-day snack. And if you can’t let go of you avocado toast quite yet, we’ve got an avocado sweet potato toast for you too!

Ingredients

  • Pizza Sweet Potato Toast
  • 1 sweet potato slice
  • 1-2 tablespoons pizza sauce
  • Sprinkle of mozzarella cheese
  • Fresh basil, chopped
  • Almond Butter Banana
  • 1 sweet potato slice
  • 1-2 tablespoons almond butter
  • Banana slices
  • Sprinkle of cinnamon
  • Blueberry Goat Cheese
  • 1 sweet potato toast
  • 1-2 tablespoons goat cheese
  • Blueberries
  • Drizzle of honey
  • Avocado Sweet Potato Toast
  • 1 sweet potato slice
  • 1-2 tablespoons mashed avocado
  • Crushed red pepper flakes

Directions

  1. Slice sweet potatoes vertically into 1/2 inch thick slices. Toast in a toaster for 3-4 cycles until sweet potatoes are softened and starting to brown.
  2. Add desired toppings!
