carrots, celery and onion

cauliflower, broccoli and peppers

cannellini beans or another white bean

parsley, thyme, oregano, ginger 

bone broth, chicken broth, or vegetable broth 

optional: potatoes, gnocchi, or pasta

Vegetable soups are incredibly easy to customize which makes it a wonderful recipe to make with whatever you have on hand. However, there are a few staple ingredients that you’ll be sure you’ll want to use.

celery, carrots, and onion

These will give you lots of delicious flavor and nutrition.

Add in another favorite veggie (or two... or three) 

cauliflower, broccoli, peppers, or green beans are what I typically use but feel free to use peppers, or mushrooms

HERBS 

Herbs are a great ingredient to bring extra flavor. These are the most common herbs used in vegetable soups. Pick 2-3 and you should be good! 1. Parsley                         5. Bay Leaves  2. Thyme                         6. Red Pepper  3. Oregano                      7. Ginger  4. Rosemary                   8. Turmeric
