Easy Hamburger Soup with Potatoes

This easy hamburger soup with potatoes is a hearty and wholesome soup that is family-friendly and chock full of veggies, ground beef, potatoes, and macaroni. Simmer all day in the slow cooker or cook it up in 35 minutes or less on the stove top.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion chopped
  • 2 carrots peeled and chopped
  • 2 stalks celery chopped
  • 1 pound 95% extra lean ground beef
  • 4 cloves garlic minced
  • 1 large russet potato cubed
  • 1 tablespoon Italian seasoning
  • 1 bay leaf
  • 1 15 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 5 cups low sodium beef broth
  • 1 tablespoon worcestershire sauce
  • 1 cup frozen peas
  • 2 cups cooked macaroni elbows
  • 1 15 oz can of white navy beans, drained and rinsed
  • ¼ teaspoon sea salt add more if needed
  • ¼ teaspoon ground black pepper

Instructions

  • Add olive oil to a dutch oven and saute the onion, celery and carrot until the onion is translucent, about 5 minutes.
  • Add the ground beef and cook until browned, using a wooden spoon to break into small pieces.
  • Add the garlic, potato, and Italian seasoning and saute 1 minute.
  • Stir in the bay leaf, diced tomatoes, tomato sauce, and beef broth. Cover and bring to a simmer and cook for 20 minutes or until the potatoes are tender.
  • Stir in the worcestershire sauce, peas, cooked macaroni, and navy beans. Cook for another 2-3 minutes. Season with salt and pepper. Serve!
