- 1 15 oz can chickpeas, rinsed and drained
- ¼ cup vanilla protein powder*
- ¼ cup almond butter
- 3 tablespoons maple syrup
- ½ teaspoon vanilla extract
- ½ cup mini chocolate chips*
Add chickpeas to a food processor and process until they start to form a paste. You may need to use a spatula to scrape down the sides a couple times.
Add the protein powder, almond butter, maple syrup, and vanilla extract. Process until a ball of dough forms.
Add chocolate chips and pulse 2-3 times or until the chocolate chips get dispersed in the cookie dough.
*Use vegan versions of these ingredients for a vegan-friendly and dairy free dip.
