Healthy Mexican Pizza (Taco Bell Copycat)

The whole family will love this 25-minute homemade Mexican pizza recipe that is a healthier Taco Bell copycat! This lightened up vegetarian version of the classic features refried beans and extra veggies for more fiber and less fat.

Ingredients

  • 8 6 inch fajita tortillas (whole wheat if you can find then)
  • 1 15 oz can vegetarian refried beans
  • 1 teaspoon chili powder
  • ½ cup tomato sauce
  • ½ cup red enchilada sauce
  • ½ cup frozen corn thawed
  • cup chopped green bell pepper
  • cup chopped red onion
  • ½ cup chopped cherry tomatoes
  • 1 cup shredded mexican cheese divided

For Serving

  • Salsa Avocado, Cilantro, Greek Yogurt/Sour Cream, Hot Sauce

Instructions

  • Salsa, Avocado, Cilantro, Greek Yogurt/Sour Cream, Hot Sauce
  • Preheat the oven to 350 degrees Fahrenheit. Arrange the tortillas in a single layer on a baking sheet (working in batches if needed) and bake for 12-14 minutes or until starting to turn golden brown.
  • While the tortillas bake, add the refried beans and chili powder to a skillet over medium-high heat. Cook for 3-5 minutes or until the beans are warmed through.
  • Assemble the pizzas by spreading ¼ of the bean mixture over 4 of the baked tortillas. Spread 1-2 tablespoons of the sauce mixture over the beans. Top with the corn, ½ of the bell peppers and red onion, and 1/2 of the cheese.
  • Top with the second tortilla. Spread the rest of the sauce mixture over the top of the pizzas. Next, add the rest of the cheese as well as the tomatoes and the remaining bell peppers and red onions.
  • Bake for another 8-10 minutes or until the cheese is melted. Add your choice of additional toppings like salsa, sour cream, cilantro, and more to serve.

Notes

Make a lower calorie version of these Mexican pizzas by using low calorie tortillas or using only 1 tortilla per pizza
