Preheat the oven to 425 degrees Fahrenheit and line the baking sheet with parchment paper.
Peel the sweet potatoes and cut them into ¼” thick fries. Add to a large mixing bowl and toss with cornstarch, avocado oil, sea salt, and paprika. Spread onto the baking sheet in a single layer, making sure that no fries are touching to ensure the best crisp.
Bake for 20 minutes, flip and bake for another 10-18 minutes until the tips are golden.
