- 2 eggs
- 1 tablespoon milk
- 1/2 tablespoon crumbled feta cheese
- 4-5 cherry tomatoes quartered
- 3 tablespoons minced spinach
- 1 teaspoon chopped chives
- Salt and black pepper to taste
Coat the inside of your with cooking spray.
Crack the eggs into your mug with the milk and whisk with a fork. Add the other ingredients and stir.
Microwave 1.5-2 minutes (time varies depending on your microwave), stirring halfway through, until the eggs are fully cooked.
Add salt and pepper to taste!
