Ingredients

  • 2 eggs
  • 1 tablespoon milk
  • 1/2 tablespoon crumbled feta cheese
  • 4-5 cherry tomatoes quartered
  • 3 tablespoons minced spinach
  • 1 teaspoon chopped chives
  • Salt and black pepper to taste

Instructions

  • Coat the inside of your with cooking spray.
  • Crack the eggs into your mug with the milk and whisk with a fork. Add the other ingredients and stir.
  • Microwave 1.5-2 minutes (time varies depending on your microwave), stirring halfway through, until the eggs are fully cooked.
  • Add salt and pepper to taste!
