Servings: 4 bowls
- 2 large sweet potatoes cubed
- ½ teaspoon garlic powder chili powder, and salt
- 1 tbsp olive oil
- 1 lb 93/7 lean ground beef
- 1 tbsp tomato paste
- 2 tbsp taco seasoning
- 1 cup 2% low fat cottage cheese
- 1 large avocado chopped
- 4 teaspoons hot honey
Preheat the oven to 400 degrees Fahrenheit. Chop the sweet potatoes into ½ inch cubes and add to a large mixing bowl. Toss with the seasoning (garlic powder, chili powder, and salt) and olive oil. Transfer to a rimmed baking sheet and bake for 20 minutes.
While the sweet potatoes are baking, add the ground beef to a skillet over medium-high heat and break apart with a spatula. Add the tomato paste and taco seasoning and continue to cook until beef is browned.
Divide the sweet potatoes, beef, cottage cheese, avocado, and hot honey between four bowls.
