Ingredients

For the Salad:

  • 5 cups chopped broccoli 2-3 broccoli florets
  • 1 cup red grapes halved
  • ½ red onion chopped
  • ½ cup dried cranberries
  • cup sunflower seeds

For the Dressing:

  • ¾ cup plain unsweetened Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup or honey
  • ½ tablespoon Dijon mustard

Instructions

  • Chop the broccoli into bite size pieces and place in a large mixing bowl with red grapes, onion, dried cranberries, and sunflower seeds.
  • In a smaller bowl, whisk the yogurt, vinegar, maple syrup, and dijon together until all the ingredients are blended. Taste and adjust, adding more maple syrup or vinegar as desired.
  • Pour the dressing over the broccoli mixture and stir. Add salt and pepper to taste. Chill for at least 30 minutes (or longer) then enjoy!
