Healthy Broccoli Salad (No Mayo!)

For the Salad:
- 5 cups chopped broccoli 2-3 broccoli florets
- 1 cup red grapes halved
- ½ red onion chopped
- ½ cup dried cranberries
- ⅓ cup sunflower seeds
For the Dressing:
- ¾ cup plain unsweetened Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup or honey
- ½ tablespoon Dijon mustard
Chop the broccoli into bite size pieces and place in a large mixing bowl with red grapes, onion, dried cranberries, and sunflower seeds.
In a smaller bowl, whisk the yogurt, vinegar, maple syrup, and dijon together until all the ingredients are blended. Taste and adjust, adding more maple syrup or vinegar as desired.
Pour the dressing over the broccoli mixture and stir. Add salt and pepper to taste. Chill for at least 30 minutes (or longer) then enjoy!
