Recipe: Pepper Jack Stuffed Turkey Zucchini Meatloaf

We’re pretty obsessed with zucchini over here at Get Healthy U! It’s in season, it’s tasty, and it’s good for you! So needless to say a turkey zucchini meatloaf stuffed with oozing pepper jack cheese sounded pretty amazing to us, and it was! A delicious low-carb meal with tons of flavor and an “AWESOME” sauce indeed. Try it out for yourself and share it with a friend, this is a no-brainer that we will make again soon!

Ingredients

  • 1 1/2 pounds extra lean turkey breast (about 96% or higher)
  • 1 cup diced white onion
  • 1 cup shredded zucchini, squeezed of excess moisture with a paper towel
  • 2 cloves garlic, minced
  • 1 egg, slightly beaten
  • 1/2 cup panko breadcrumbs* (may use GF breadcrumbs)
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper (if you like heat)
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon fresh cracked black pepper
  • 1/2 teaspoon sea salt
  • 4 ounces sliced pepper jack cheese
  • (Sauce)
  • 1/2 cup tomato sauce
  • 1 1/2 teaspoons apple cider vinegar
  • 1/2 tablespoon honey
  • 1 tablespoon mustard
  • dash of soy sauce (gluten free, if desired)
  • dash of hot sauce

The question Marisa asked wasn't answered as I clieked on the green button for the full recipe. It clearly states it is 4 servings but in the instruction it states to cut into 6 slices, which makes it confusing what a serving size it.

    Ahhh so I see where that can be confusing. So I did some researching on the original recipe (when you click on the green button for the full recipe) to find out what you are looking for. At the bottom of the article there is nutrition information. Here is the nutrition information for this recipe: Nutrition Servings: 4 servings Serving size: 1 serving Calories: 262kcal Fat: 13.2g Carbohydrates: 13g Fiber: 2.3g Sugar: 4.5g Protein: 22.9g Let me know if you have any other questions!

Hi! I’ve made this meatloaf a few times and I love it!! My question is about serving size. In the directions it states to cut into 6 pieces, but you have 4 as serving size. So is the serving 4 or 6? This would help me out. Thank you!

It’s not really a recipe if you only give the ingredients. How long do I cook it? At what heat? I need this information to make this “recipe”
