Recipe: Pulled Pork Tacos {Gluten Free}

Tacos are the perfect family-friendly meal because they are easy, flavorful and versatile! Make this pulled pork taco recipe the night before for a quick lunch or dinner the next day. You can get creative with the toppings and feel free to skip out on the taco and cheese and exchange it for a salad if you want a Paleo and dairy-free option!

Ingredients

  • 2 pounds boneless pork shoulder (not too lean), cut into 3/4 inch chunks
  • 2 tablespoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 generous tablespoon coconut oil
  • 1 medium yellow onion, peeled and finely chopped
  • 1 poblano pepper, seeded and finely chopped
  • 1 serrano chili, seeded and finely chopped
  • 2 garlic cloves, minced
  • 1 28-ounce can of petite diced tomatoes, with their juices
  • 2 teaspoons cumin seeds
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 large lime
  • Corn tortillas {gluten free}
  • 1 avocado, peeled and cubed
  • 2 tablespoons fresh cilantro, washed, dried and roughly chopped
  • 5 ounces queso cheesed, grated
  • Sour cream (optional)
