Recipe: Superfood Enchilada Dip

This Superfood Enchilada Dip is the most delicious and filling game day snack. Packed with all of your favorite superfoods including sweet potatoes, avocado, beans and cilantro, this recipe will have your guests munching all game long. Serve with sprouted tortilla chips for a sure-fire crowd pleaser. Plus, it’s a one-pan dish and a cinch to make in a cast iron skillet.
Ingredients
- 1/2 pound ground meat (beef, chicken, turkey or bison)
- 1 1/2 tablespoons extra virgin olive oil
- 1 tablespoon garlic, minced
- 1 cup sweet potatoes, finely diced
- 1/2 red onion, minced
- 1/2 cup black beans
- 1/2 cup northern white beans
- 1/2 cup sweet corn
- 1 1/2 cups enchilada sauce
- Salt, to taste
- 1/2 cup cheese
- 2 tablespoons fresh cilantro
- 1 avocado, sliced
