Recipe: Avocado Chocolate Cake

Did you know that you can sub avocado for butter or oil when baking?  This easy substitute can reduce fat, add nutrition, and cut back on calories.  Our friend Chocolate Covered Katie tried this swap out and came up with the creamiest chocolate cake ever!  It’s total perfection; shamelessly sweet!

Ingredients

  • 1 cup spelt flour
  • 6 Tbsp cacao
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup xylitol
  • 1/2 cup mini chocolate chips
  • 1/4 cup yogurt of choice
  • 3/4 cup water
  • 1/4 cup mashed avocado
  • 2 tsp vanilla extract

What's xylitol? Isn't it healthier to use a natural sweetener? Sucanat? Coconut sugar?

    Sweeteners like xylitol, a sugar alcohol, are processed to reduce caloric content- xylitol is typically less bothersome to the digestive tract than other sugar alcohols. Coconut sugar and sucanat are both natural sugars … you can use any type of sugar you’d like though…
