Recipe: Black Bean and Quinoa Stuffed Red Peppers with Avocado Lime Sauce

These stuffed peppers sound fancy, but they are actually very easy to make.  They are perfect for healthy summer grilling with my family and friends!  The black beans, quinoa, veggies and cheese are delicious with the charred red pepper and the avocado lime sauce gives this recipe a delightful zing.  I always love roasted red peppers, but this recipe takes them to a whole new level!



Stuffed Peppers:

  • 4 large Red Bell Peppers, roasted
  • 2 cups Quinoa, cooked
  • 1 15 oz can Black beans rinsed and drained
  • 1 8 oz can corn rinsed and drained
  • 1/4 cup Tomatoes, diced
  • 1/4 cup Cilantro, chopped
  • 1/3 cup Cheddar Cheese, shredded
  • 1/3 cup fat free Sour Cream
  • 1 tsp Salt (add more to taste if needed)
  • 1/2 – 1 tsp Black Pepper (add more to taste if needed – depending on how spicy you want the filling to be)

Avocado Lime Sauce:

  • 1 Avocado, ripe
  • 2 Limes, juiced
  • 1 heaping tbsp Fat Free Sour Cream
  • dash of salt
  • 1 tsp Black Pepper
