Recipe: Coconut Almond Muffins

Breakfast Recipes, Snack Recipes

I’m a lover of all things almond and coconut, so naturally this recipe sounded absolutely delectable to me.  I whipped up a batch yesterday, and let me tell you, these bad boys are unbelievable!  My boys even tried them (I didn’t tell them they were gluten free) and scarfed down multiple muffins in a row.  If that’s not a telling sign of their amazing-ness, I don’t know what is!

What could I substitute for honey.

You could swap in maple syrup or agave nectar depending on your reason to switch out honey.

Of course! It just might not be as sweet :)

How can these muffins be gluten-free with oats and oat flour? They sound delicious, but I'm allergic to gluten. Thank you!

have to buy gluten free oats and oat flour … it’s easy to find gluten free oats … if you can’t find the flour - sub out a different gluten free flour no problem!
