Recipe: Coconut Almond Muffins

I’m a lover of all things almond and coconut, so naturally this recipe sounded absolutely delectable to me.  I whipped up a batch yesterday, and let me tell you, these bad boys are unbelievable!  My boys even tried them (I didn’t tell them they were gluten free) and scarfed down multiple muffins in a row.  If that’s not a telling sign of their amazing-ness, I don’t know what is!

Ingredients

  • 3/4 cup oat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup unsweetened coconut flakes
  • 1/4 cup natural almond butter
  • 1/4 cup unsweetened apple sauce, plus 2 tablespoons
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon pure almond extract
  • 1/2 teaspoon apple cider vinegar
  • 1 large egg white
  • 1/4 cup honey, plus 1 tablespoon
  • 1/2 cup vanilla almond milk

      You could swap in maple syrup or agave nectar depending on your reason to switch out honey.

    have to buy gluten free oats and oat flour … it’s easy to find gluten free oats … if you can’t find the flour - sub out a different gluten free flour no problem!
