Gluten free cupcakes sometimes get a bad rap! Too dry, too hard. But not these Gluten Free Cupcakes. These little guys are soft, perfectly-domed, and delicious! Plus, I love that they are under 100 calories! Oh, and they are topped with a healthy Nutella frosting. Yum!



  • 1/2 cup plus 3 tbsp Bob’s gluten free flour
  • 1/4 tsp xantham gum
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup xylitol or sugar of choice
  • 1/4 cup mayonnaise spread
  • 1 1/2 tsp pure vanilla extract
  • 1/3 cup plus 1 tbsp water
