Recipe: Greek Yogurt Chicken Salad

recipe: Sandwiches and Wraps

A chicken salad sandwich is in every deli case, every gas station, and every company lunch room. But before you reach for that tempting wrap, check the calories. Shocking, right? It’s the mayo! Thankfully, we have our friend Greek yogurt to lend us a healthy hand. This chicken salad recipe swaps the mayo (and the fat!) for high-protein Greek yogurt. Now just throw in some lemon, honey, slivered almonds, grapes, and chicken for a quick, easy, and healthy lunch. This recipe pairs the chicken salad with a whole wheat ciabatta bun, but I’ve eaten it on top of salad greens and rolled in a whole wheat tortilla. All ways are yummy!

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 ounces plain, nonfat Greek yogurt
  • 1/4 cup honey
  • 1 teaspoon lemon juice
  • 1 cup grapes, halved
  • 1/3 cup slivered almonds
  • Handful of organic spring lettuce
  • 8 whole wheat ciabatta buns

Why the need for the added olive oil? I also wish you would post nutritional data. Thanks.
