Recipe: Healthy Baked Falafel Pita

Mediterranean cuisine has some pretty great stuff going on, including the falafel. However, since falafels are typically deep fried chickpea patties, The Picky Eater took it upon herself to makeover the traditional falafel by baking them instead of frying them. The results? Spectacular. Swap in a whole wheat pita and extra veggies and you’ve got yourself a delicious and healthy meal.


  • Falafel
  • Whole wheat pitas
  • 1 15-ounce can chickpeas, well drained
  • 1 red onion, very finely chopped
  • 1/4 cup whole wheat flour
  • 3 tablespoons finely chopped parsley
  • 1 1/2 tablespoon chopped garlic
  • 1 tablespoon chopped fresh cilantro
  • 1/2 tablespoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon lemon juice
  • 1/8 teaspoon paprika, or more to taste
  • Black pepper, to taste
  • Olive oil nonstick spray
  • Baby spinach
  • Diced tomatoes
  • Sauce
  • Hummus
