Recipe: Honey Garlic Caramelized Carrots

Vegetable side dishes have a way of bringing together the whole meal and these honey garlic caramelized carrots may just take center stage. Made on the stovetop (we did ours in a cast iron skillet!), the carrots get browned and golden among notes of butter, honey and garlic.
This vegetarian and gluten-free recipe brings out the natural sweetness in the carrots and is sprinkled with fresh parsley. Perfect for the holidays or a cozy night at home.
- 3 tablespoons unsalted butter, divided
- 1 pound carrots, cut into one-inch chunks on the diagonal
- 1/2 teaspoon kosher salt
- 2 cloves garlic, thinly sliced
- 1 tablespoon raw honey
- 1 tablespoon minced fresh flat-leaf parsley
