Recipe: Low Carb Spaghetti Squash Lasagna Casserole

Italian food is one of my favorites, but it’s usually so high in carbs! This low carb spaghetti squash lasagna casserole recipe has all the flavors and textures of lasagna, but cuts the carbs and is filled with good-for-you ingredients. Topped with a hearty traditional Italian meat sauce and layers of melted cheese, you won’t miss those lasagna noodles a bit. The recipe is a snap to make and will feed a large, hungry group. My boys can be a bit skeptical when I change a classic recipe, but they loved this lasagna casserole and my entire family gives it two thumbs up!


  • 3 pounds spaghetti squash, halved lengthwise, seeded
  • 2 pounds ground beef
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 32 ounces marinara sauce, divided
  • 24 ounces ricotta cheese, part skim
  • 2 cups shredded mozzarella, divided
  • 1/4 cup grated Parmesan
  • 2 eggs
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper

Wow, just made this for supper (used ground turkey), and it's delicious! This recipe is a keeper!
