Corn on the cob is a yummy side dish that is always a family favorite, but I’m absolutely loving this fun twist! Mexican Street Corn is grilled corn covered in  low fat mayo, garlic powder, queso fresco, and chile powder for an extra kick. For anyone who is cob-averse, you can definitely cut the corn off the cob and mix this all up in a big bowl, and it will be equally delicious!



  • 4 ears corn
  • 1/4 cup low fat mayonnaise
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 cup queso fresco
  • 1/2 tsp. chile powder
  • Lime wedges
