Are you ready for an easier version of a classic meal? This One Pot Cauliflower Piccata Pasta is cooked in one pot and the starch from the pasta water makes a creamy sauce when you mix in your Parmesan cheese. This is a fresh, salty, flavorful meal, but is low calorie (only 300 calories!) and vegetarian!
Ingredients
- 1 tablespoon butter (or olive oil)
- 3 cloves garlic, minced
- 1 shallot
- 1/4 teaspoon red pepper flakes
- 8 ounces high fiber pasta
- 4 cups cauliflower florets
- 3 cups vegetable broth
- 1 lemon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon capers
- 1/2 cup Parmesan cheese
- 1/4 cup parsley
