This One Pot Cauliflower Piccata Pasta is cooked in one pot and the starch from the pasta water makes a creamy sauce when you mix in your Parmesan cheese. This is a fresh, salty, flavorful meal, but is low calorie (only 300 calories!) and vegetarian!


  • 1 tablespoon butter (or olive oil)
  • 3 cloves garlic, minced
  • 1 shallot
  • 1/4 teaspoon red pepper flakes
  • 8 ounces high fiber pasta
  • 4 cups cauliflower florets
  • 3 cups vegetable broth
  • 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon capers
  • 1/2 cup Parmesan cheese
  • 1/4 cup parsley
