This roasted eggplant and zucchini bruschetta recipe is a yummy update to the traditional bruschetta. Don’t worry! Tomatoes and basil are still present, but nutrient-filled zucchini and roasted eggplant take center stage. The more veggies the better!

  • 1 small or medium eggplant, diced
  • 1 zucchini, diced
  • 2 medium tomatoes, diced
  • 1/2 white onion, diced
  • 1 clove of garlic, minced
  • 1/3 cup of reduced fat feta
  • 2 tsp of balsamic vinegar
  • 1/2 cup of fresh basil, chopped
  • 2 tablespoons of olive oil
  • 1 tsp of salt
  • black pepper
  • 1 loaf of whole wheat french baguette
