Stuffing is one of my favorite dishes at Thanksgiving dinner, but I also know it’s one of the worst things for you.  Even though I know better, it’s hard to stop myself from getting a big heaping of it on my plate.  These little “stuffins” are the perfect way to portion control your Thanksgiving!  Not only do these help you to moderate your intake, but they look absolutely adorable at the same time. The only thing I changed from the recipe is that I browned the bread for 20 minutes instead of 45 minutes!

Ingredients

  • 8 slices light wheat bread
  • 3 Tbsp light butter
  • 1 clove garlic
  • 1/2 medium onion
  • 1/2 cup chopped celery
  • 3 oz Craisins
  • 2 large eggs
  • 1/2 cup vegetable broth
  • 1/2 cup chopped fresh parsley
  • 1/2 tsp salt
  • 1 tsp rubbed sage
  • 1/2 tsp dried thyme
