Recipe: Sweet Potato and Spinach Egg Muffins

These make the perfect low-calorie high-protein breakfast.  What I love most about these is the fact that you can make a batch on the weekend and then set yourself up for easy on-the-go breakfasts all week!  Anything to make my morning more stress free is a win in my world.  It makes a world of a difference to have breakfast already pre-made.  These muffins have tons of awesome vitamins and minerals, too.  A great way to start your morning off on the right foot!


  • 4 eggs
  • 6 egg whites
  • 1/3 cup skim milk
  • 1 tbsp fresh chives
  • 1/2 tbsp olive oil
  • 1 cup diced sweet potato
  • 1/4 cup diced onion
  • 2 cups spinach
  • 1 garlic clove
  • pinch nutmeg
  • salt and pepper

I've frozen similar egg/quiche muffins before and it worked wonderfully.
