Recipe: Vanilla Raspberry Overnight Oats

Overnight Oats are the perfect solution for busy students, mothers, and workers who don’t want to skip out on “the most important meal of the day.” Overnight Oats can be as simple or as fancy as you want them and require little time to prep. You can make five for the week, all with different ingredients to avoid boredom, and keep them in mason jars or tupperware in the fridge until you’re ready to eat them each morning. Once soaked overnight, the oats are ready to eat at anytime, Monday or Friday. Eat them cold or heat them up, they are the perfect on-the-go meal!

Ingredients

  • 1/2 cup gluten-free rolled oats
  • 3/4 cup vanilla almond milk
  • 1 tbsp. ground flax seed
  • 1 tsp. honey
  • 1/8 tsp. vanilla bean paste*
  • Pinch of salt (optional)
  • 1/2 cup mashed raspberries

Directions

  1. In a mason jar, add rolled oats and vanilla almond milk
  2. Add flax seed, honey, vanilla bean paste and a pinch of salt
  3. Stir all ingredients thoroughly together with a fork.
  4. In a separate bowl, mash 4-6 ripe raspberries until they're at a consistency you like.
  5. Add raspberries to oatmeal and stir in.
  6. Leave mason jar in the fridge overnight.

*Vanilla bean paste is thicker than vanilla extract. It’s a thin syrup and has the little specks of ground vanilla beans - I like the look. You can sub out vanilla extract at a 1 to 1 ratio. I have been told and I have found the paste works best in uncooked or lightly cooked desserts and things like oats, pudding, etc. That is why I use it. You can find the paste online or at most grocery stores in the baking section.

There are a few of my FAVORITE words in this recipe: RASPBERRIES, vanilla, almond, honey, and oats! Can't wait to try this!! ...do you have some easy vegetarian dinner/supper entrees? My 16 y.o. daughter has decided to become vegetarian and as a meat lover, I'm at a loss of what to make for her (and myself. I'm not going to cook two different meals all the time!)
