Jicama is crispy and sweet, nearly tasteless, and is great to add raw to any salad for added nutrition. This jicama salad is paired with butter lettuce, arugula and cilantro or parsley for some added greenery. It is a wonderfully light, zesty salad that is perfect for the summer!

 

Ingredients

  • 2 pounds jicama, peeled, thick matchstick slices
  • 2 limes, juiced and zested
  • 1 teaspoon salt
  • 1 yellow pepper, sliced (about 2 cups)
  • 1/2 cup sliced red onion
  • 1 cup arugula
  • 1 cup butter lettuce, chopped
  • 1/4 cup fresh chopped cilantro or parsely
  • 1 teaspoon pepper
  • 3 tablespoons extra virgin olive oil
