Since traditional egg rolls are deep fried and filled with some questionable ingredients, I’m loving this good-for-you version: Baked Veggie Rolls. Each roll is packed with vegetables, baked not fried, and under 100 calories! Your family will never know you didn’t order take out!

Ingredients

  • 2 tsp. sesame oil
  • 1/2 cup red onion, minced
  • 1 clove of garlic, minced
  • 1 tbsp. fresh ginger
  • 1 carrot, grated
  • 3 cups cabbage, shredded
  • 1 cup mushrooms, sliced very thin (julienned)
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 12 egg roll wrappers
