Recipe: Banana Berry Baked Oatmeal

If the picture doesn’t instantly make you whip out a mixing bowl, I don’t know what will! This baked oatmeal is not only mouth-watering gorgeous, but takes a grand total of 10 minutes to toss together before popping in the oven. The fluffy insides is packed with berries and bananas and naturally sweetened with honey. Talk about pure morning goodness! PS: If you don’t have oat flour, do what I did by tossing oats into a NutriBullet until it turns into a flour-like powder, but you can use a food processor, too.

Ingredients

  • 2.5 cups oatmeal, quick cooking
  • 1/2 cup ground oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 bananas, large, sliced
  • 1 cup blueberries, fresh or frozen
  • 1/2 cup raspberries, fresh or frozen
  • 2 eggs, large
  • 1 teaspoon vanilla
  • 1/4 cup honey
  • 2 tablespoons coconut oil, melted
  • 1 cup almond milk, unsweetened

Use chia seeds as egg substitute. Do a search on how.
