Recipe: Banana Parfait with Date Caramel

I stumbled upon an awesome recipe from talented food blogger Top with Cinnamon for a Healthy Banoffee Parfait. I wanted to try it out for a new healthy, filling breakfast instead of my go-to boring oatmeal. However, I tweaked it a little to be a smaller serving, gluten-free, and an optional dairy-free recipe for those who need it. It’s a perfectly sweet and filling breakfast using natural and healthy ingredients.

Ingredients
- 1/4 cup low-sugar granola (can use gluten-free or homemade!)
- 1/2 cup low fat Greek yogurt (or coconut kefir if you're dairy-free)
- 1/8 teaspoon vanilla bean paste or vanilla extract
- 1/2 of a banana
- For the date caramel:
- 1/4 cup chopped, pitted dates
- 1/4 cup unsweetened almond milk
- Dash of salt
Directions
- To make the date caramel, in a food processor mix together dates, almond milk, vanilla and salt. Then transfer to a saucepan under low heat until the caramel has thickened (about 7 minutes). Set aside to cool
- Slice the banana into coins.
- In a separate bowl, stir together vanilla and yogurt
- In a jar, layer with the yogurt, a thin layer of granola for added crunch, the date caramel and then the banana coins 2-3 times over until the ingredients are used up
