Recipe: Broccoli Salad with Cashew Curry Dressing

I eat broccoli almost every single day.  I truly love it so much!  I’m always looking for new ways to spice up my favorite veggie, and this cashew curry salad dressing is the perfect addition to my favorite leafy green wonders!  I made a huge batch of this for the week, and omitted the turkey bacon so my vegan daughter could enjoy it as well.  It was full of flavor and maintained a little extra crunch from the cashews.  We’ve got ours stored in the fridge, but I’m sure we will burn through it quickly.  It’s too good to deny!

Ingredients

  • 3/4 cup roasted cashews
  • 5 1/2 tbsp water
  • 1 tbsp apple cider vinegar
  • 4 tsp yellow curry powder
  • 2 1/2 tsp light agave nectar
  • 1/2 tsp salt
  • 4 cups broccoli
  • 1/4 cup red onion
  • 1/2 cup cilantro
  • 2 pieces turkey bacon
  • 1/4 cup dried cranberries
  • 2 tbsp sunflower seeds
  • 2 tbsp roasted cashews
