Recipe: Egg Muffins with Savory Oatmeal Crust

We love ourselves a good egg muffin. And we LOVE the idea of using oatmeal to make this crunchy crust that can be filled with fluffy egg and savory vegetable stuffing. This protein packed portable will make your Sunday brunch or any breakfast incredible!

Ingredients

  • 1 1/4 cup water
  • 1/8 teaspoon salt + additional for the eggs
  • Pinch of pepper
  • 1/2 tablespoon olive oil
  • 3/4 cup broccoli, cut into very small pieces
  • 1/3 cup red pepper, diced
  • 3 tablespoons onions, diced
  • 1 teaspoon seasoning salt
  • 1 egg white
  • 3 large eggs
  • 1 cup old fashioned oats (gluten free optional)
