Recipe: Healthy Macaroni and Cheese

This is an amazing healthy recipe makeover! Who knew macaroni and cheese could be healthy and still taste delicious. Made with whole grains and vegetables, this dish still has that delicious rich and creamy cheddar cheese sauce that you and your family will love!


  • 8 ounces (2 cups) whole-wheat elbow noodles
  • 10 ounce package frozen chopped broccoli (or fresh broccoli florets – cut small)
  • 10 ounce bag of baby spinach or baby kale (optional)
  • 2-3 cloves fresh garlic, minced
  • 1 3/4 cups 1% milk, divided
  • 3 tablespoons flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup shredded extra-sharp cheddar cheese
  • 1/4 cups shredded Parmesan cheese
  • 1/4-1/2 teaspoon Dijon mustard
  • Optional: 1/8-1/4 tsp crushed red pepper
