These low carb baked cauliflower tortillas are gluten free, grain free, and a healthier alternative to typical tortillas. Nobody would ever know they aren’t standard, unhealthy tortillas, but they ARE! Try this healthy alternative the next time you whip up tacos, fix yourself a breakfast burrito, or indulge in a quesadilla. They’re super easy to make, have only a few ingredients, and are going to totally change the way you feel about tortillas!

Ingredients

  • 4 cups cauliflower florets
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 1/4 cups shredded Mexican cheese

I almost had a perfect batch of tortillas but I put them on 5 more min to brown and turned the oven off. Had to dash out. Came home to nice crispy wafer crisps. Still totally edible as a crispy snack. All the grease gone too. Will try again for the intended result.
