Recipe: Maple Pecan Pumpkin Granola

I’m a granola fanatic.  I love adding a little crunch to my morning smoothie, or stirring some in greek yogurt, or even just grabbing a handful when I’m on the go.  This recipe not only satisfies my granola obsession, but it also feeds my need for my favorite fall food: PUMPKIN!  Seriously guys, I have a pumpkin problem.  At least it’s a healthy obsession, right?  This pumpkin granola recipe really hits the spot.  It’s not overly sweet, which I like, and has loads of crunchy clusters.

Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup organic cane sugar
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 2.5 cups rolled oatmeal, gluten free
  • 1/2 cup dried cherries, unsweetened
  • 1/2 cup pecans
  • 1/2 cup pumpkin seeds
  • 2 teaspoons pumpkin pie spice
